Sauerkraut, Fermented Cabbage

This fermented cabbage dish is most commonly associated with German /Polish cuisine.  'Sauerkraut' is a German word meaning sour herb/vegetable.

This version of a classic is slightly sour with aromatic notes of caraway.

The mix of cabbage and caraway is left to naturally ferment with Cornish Sea Salt in traditional ceramic crock pots for a minimum of three weeks. This allows for optimum flavour development and ensures the cabbage still retains it's wonderful texture and crunch.

This kraut works well with salted meats and makes a lovely addition to salads, soups and stews.

I grew up on a smallholding here in Cornwall, so from an early age appreciated the need for local, organic produce – not only to support local business, but also from a wellbeing perspective. The most effective of these has been an understanding of what I eat and a positive attitude towards nurturing my body.Through research into the human gut microbiome and the profound effects it can have on our body’s ecosystem, I have begun my journey in an area that is still relatively new. While travelling and communicating with people all over the world, I have found that I’m not alone. I have seen first-hand the positive ways in which good food including fermented foods, can transform lives, from the simple pleasures of enjoying a delicious dish to alleviating chronic illnesses. Although I have years of experience providing high quality service in the food and beverage industry, my real passion lies with the honest food I produce, using fresh and local ingredients. In October 2019, I decided to set up Delea as a way of connecting with people through quality food, applying all that I have learned and continue to learn through my own health journey. At a time when food intolerances are becoming more and more apparent, I take great pride in constructing recipes, so that more people can enjoy tasty, flavoursome food.
